Double Choc Chip Pupcakes
Ingredients
65g oat flour
35g besan (chickpea) flour
35g tapioca flour
1 tsp linseed
20g cocoa powder
2 tbsp carob and coconut oil drops
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 large potato (cooked and mashed whilst hot)
2 tbsp natural yogurt
2 tbsp smooth peanut butter (100% peanuts such as Mayvers or Sanitarium)
Method
- Place all dry ingredients into a large bowl.
- Add approx 200ml of water and stir well.
- Spoon into cases or silicone moulds and smooth tops.
- Bake at 160 fan (180 regular) for approx 25 minutes.
Decoration
Whilst the pupcakes are baking, prepare the decoration. Boil the potato until soft then mash whilst still hot. When cooled down (but still warm) beat in the yogurt and peanut butter.
Once the pupcakes are cool, place the potato mixture into a piping bag with a star nozzle, and pipe onto the pupcakes.
Can be decorated with mini bone biscuit.
Fruit/Veg Pupcakes
Ingredients

Your choice of mashed banana/steamed mashed pumpkin/grated carrot/grated zucchini/mixed berries
1 large potato (cooked and mashed whilst hot)
2 tbsp natural yogurt
2 tbsp smooth peanut butter (100% peanuts such as Mayvers or Sanitarium)
Method
- Place all dry ingredients into a large bowl.
- Add your choice of mashed banana/steamed mashed pumpkin/grated carrot/grated zucchini/mixed berries.
- Add up to 200ml of water (start with 100ml and increase gradually - the amount will vary dependant on how wet your choice of fruit and veg is) and stir well.
- Spoon into cases or silicone moulds and smooth tops.
- Bake at 160 fan (180 regular) for approx 25 minutes.

Recipes will make 6 pupcakes - best made on the day required as there is no fat or preservatives to keep the pupcakes moist.
